Baffi and Mo Expresso, Redfern

By Foodisourreligion @food_religion
As some of you know I HEART my potato! Potato chips, Spanish potatoes, mash potato, hash browns, baked potatoes - oh em gee, the list goes on! So when I discovered Baffi and Mo, well more of their hash browns, I jumped into a car and rushed to their door steps - COME TO MOMMA!

Potato Hash Stack with smoked salmon - $15.00?

The potato hash was gigantic and it came with half an avocado, quite generous! I actually struggled to finish it off - what is happening to me?? There wasn't any dressing on the salad but who needs dressing when you can use the egg yolk from the soft boiled egg as a dressing. Simple but effective and since that day I have stolen that idea and used it in my home cooked breakfasts!
The hash brown itself was so damn good. It was crunchy and crispy on the edges while the middle was kind of soft and potato-ey! The only thing I would fix would be to be a bit more generous on the salmon. An extra slice of salmon wouldn't of hurt.
The place is small and generally quite busy. So if you want to go, best to visit early especially if you are coming with a large group. In saying that though, the crowds do move fast for a spot for two.
