Backpackers Easy Curried Tuna Salad Recipe

This easy no-cook curried tuna salad is healthy and can be served in 3 different ways and prepared in less than 10 minutes, making it a great choice for when you’re in a hostel or time pressed.

-can of tuna
- 2 cups of yogurt
-3 celery stalks (diced)
-small red onion (diced)
-tomato or lettuce or two slices of bread (depending on serving option)

-1 1/2 Tbsp curry powder
- 1 tsp ginger
-salt and pepper to taste

Stir together the yogurt, curry powder and the ginger, then add the remaining ingredients.  Can be served immediately or let sit for 15 minutes for a more intense flavor.  Can be served in 3 different ways:  in a hollowed tomato, on top of lettuce for a salad, or as a sandwich.  The choice is up to you, or make extra and have 3 different meals!  Serves 2.
