Lasagne is always a family favourite, and this vegan aubergine and red pepper lasagne is sure to be no different. With a hearty aubergine and red pepper filling, plus a creamy white sauce, it’s packed full of flavor. Better yet, it’s made with easy-to-find ingredients and even novices will find it straightforward to make.
I’m going to say it: there has never been a better time to be vegan. Food shopping, eating out and finding inspiration and advice has never been easier.

When you include their ‘Free From’ range too, that includes vegan rocky road, Tesco is doing an amazing job at making being vegan that little bit easier.
The folks at Tesco have also been busy working on lots of delicious plant-based recipes that are full of flavor to help anyone venturing into veganism for the first time or looking to build their repertoire of meat-free meals. Here I’ve recreated one of their new recipes – this aubergine and red pepper vegan lasagne.
I love that it’s made with simple plant-based ingredients and is full of hearty vegetables. You may wonder at first if the white sauce is going to work without cheese but, trust me, with the yeast extract and mustard you won’t miss it one bit. Do stick with the extra step of frying the aubergine beforehand too; it removes any excess water to make the chunks firmer, and really brings out their flavor too.
This vegan lasagne is perfect as a make-ahead lunch or dinner and can even be frozen in portions.
Top tip: If you know your oven tends to brown things quickly or if you want to avoid the top pasta layer becoming overly crispy, you can cover the lasagne with foil before placing in the oven. Keep covered for the first half of cooking and remove so it can turn brown over the second half.
