Artichoke Pesto with Chicken Quesadillas

This haze period is making me lazy and unmotivated but being a mom, I still need to feed my family.  As we are near to many eateries, we have no issue dining out but because of this haze period, I am trying to keep my family indoor as much as possible.

So to keep my cooking as simple and nutritious as possible and as fast as possible.  Today, we will have Artichoke pesto with Chicken quesadillas.

I have tried quesadillas while dinning out but I didn't know it was that easy to assemble.


Artichoke pesto with Chicken quesadillas

What you need:

Serve 2
2 flour tortillas shredded cheese of your choice (mozzarella and cheddar) one can Alce Nero Artichoke pesto1 large boneless roasted chicken breast

Method:

Lay out a piece of tortillas.
Spread a thick layer of pesto on half of the tortilla.
Sprinkle cheese over the pesto.
Spread the chicken and capsicum on one quarter.
Sprinkle more cheese over the chicken and capsicum.
Fold into half and then quarter.
Heat a cast-iron skillet over medium low heat.  

Heat each quesadilla until the cheese begins to melt and the bottom becomes crispy and golden brown.  Flip quesadilla over and cook until the other side becomes golden brown and crispy. 

Remove from heat and serve.
