Applesauce Oatmeal Bread

King Arthur Flour is my go-to site to buy quality baking ingredients and fool-proof baking recipes. I splurge about 2~3 times a year and buy specialty ingredients for baking and cooking. My absolute favorite is their Vermont cheese powder that I use at least once a week to make mac & cheese for my kids. Another one of my favorite pantry ingredient from KAF is their pizza seasoning blend. It gives the homemade pizza that extra oomph and flavor. I get KAF catalog every month and that is one magazine that I almost read from cover-to-cover, but all it has is their products and recipes. I make note of all the new additions to the product line-up, just so that I don't miss out on them :-)
Today's bread is from one of the old KAF catalogs and I made it before we left on our vacation to India. I had some applesauce in the fridge that needed to be used up and this bread recipe came about. This bread is moist, slightly sweet and very flavorful.  Ingredients:
Sugar - ¾cup
Vegetable Oil - ½cup
Eggs - 2, large (or use 2tbsp egg reeplacer whisked in 6tbsp water)
Vanilla extract - 1½tsp All purpose Flour - 1cup Whole wheat flour - ½cup
Baking Powder - ¼tsp
Baking Soda - ½tsp
Ground Cinnamon - 1tsp
Ground Nutmeg - ¼tsp
Salt - ½tsp
Old fashioned Rolled Oats - ½cup
Apple Sauce - ¾cup
Walnuts - ½cup, chopped
Method:

• Preheat oven to 350°F. Lightly grease a 9"x5" loaf pan.
• In a large bowl, mix together sugar, eggs (or egg replacer mixture), oil and vanilla. 
• In a separate bowl, combine the flours, baking powder, baking soda, salt and spices. 
• Add the dry ingredients to the wet ingredients and mix well.
• Stir in the oats, applesauce and chopped walnuts. Mix well to combine.
• Pour the batter into the prepared loaf pan and bake for 55~60 minutes or until a cake tester inserted into the center comes out clean. Remove the bread from the oven and cool completely before slicing.
