An Epic Grocery Store Run, A Simple Dinner

The day started with a simple idea: I’ll go to Trader Joe’s and Target today. And it ended with the most grocery bags I’ve ever bought in one run. We had so many groceries that we ran out of our cloth grocery bags! It took me 20 min to unpack it all and put it away. It was epic.

We don’t normally eat this much in one week – I promise. As I told the Trader Joe’s checkout guy, who said “how long is this going to last you?” as I was checking out, the groceries were actually because my sister-in-law, her husband and my two adorable nephews are coming to stay with us in a couple days!

It’s our first time hosting anyone at our place – because we finally have a place big enough to have other people stay with us. I’m super excited, but also a little nervous because I’ve never hosted anyone before. So I might have gone a little overboard on the groceries to help ensure their stay is perfect

I don’t usually shop for food at Target, but I had to pick up some towels and other house-related items so thought I’d be efficient and do some of the groceries there too. One thing that surprised me was that they had quite a few of the items I normally pick up at Whole Foods, like Ezeikel Sprouted Grain Bread which I got on sale (super exciting!).

When I got to Target the sun was setting even though it was like 5pm (go daylight savings), so I snapped this quick shot with my phone which turned out to be pretty cool.

I ducked when that seagull in the photo flew over my head… I’m kind of scared of seagulls.

I was pretty efficient at Target but I did get somewhat distracted in the Kitchen/Housewares section…

But I knew the husband wouldn’t be happy if I came home with random plates or coffee mugs that we didn’t need. So I resisted, even though I have an unhealthy obsession with coffee mugs.

Then I proceeded to get overwhelmed by the selection of towels in the Bath section

And after staring at them for a while, I decided to stick to the tan/white/chocolate/red color theme of our bathroom and bought towels to match.

Finally, I arrived home about 3 hours later, exhausted but proud of my epic grocery adventure, 12 bags in all. Ironically, I was so tired when I got home that I didn’t have the energy to cook – even after buying all that food! So dinner ended up being a simple hodgepodge of things I could pull together quickly:

Roasted Baby Purple & Red Potatoes

A super simple recipe: Potatoes, 1 Tbsp extra virgin olive oil, salt, pepper & crushed dried rosemary to taste. Roast for 25 min at 425 degrees and enjoy!

When I was slicing the potatoes, I thought the purple potatoes looked beautiful, so I had to take a quick picture:

How cool does that look? I also had two slices of Ezeikel Sprouted Grain Bread topped with my favorite nut butters from Trader Joe’s: Almond Butter and Peanut/Flax Seed Butter, plus some wild blueberry jam from Whole Foods

I also added an organic Fuji Apple to round out the meal

Even though it was kind of a random, pulled-together dinner, I felt pretty good about how balanced it was: fiber from the potatoes, apples, nut butter and bread + protein from the 2 Tbsp nut butter I dolloped on my toast!
