As a career woman it's always a struggle to get a family meal on the table, especially with an hour commute each way from my job to home. Friday nights have been a tradition in our house to get pizza and enjoy some quality time together. Lucky for me, I have a Publix literally down the street so I stopped in the other day to grab our favorite dish.
Frozen pizza's like Freschetta's are always a go to for my family of three and my toddler can't get enough of the ooey gooey cheese and crust. I love that they use 3 whole grains that goes directly into their crust, and as my toddler will tell you, the crust is 'the best part'. I also have a weak spot for their Brick Oven pizza because that brick oven tastes as if it were cooking in that hot oven for hours! With my pizza, I try to add a bit of greens to it and came up with this delicious spinach salad.My Simple Cranberry Spinach Salad is always a hit in my house and it's usually ingredients I have in my pantry. While the pizza cooks, I put the salad together using these easy to store fixings.
Ingredients:1 bag of Spinach
1/3c Dried Cranberries
1/3c ChoppedWalnuts
1 tb Romano Cheese
1/3c Raspberry Walnut Vinaigrette
Directions:
1. Add half the bag of spinach into a bowl
2. Add cranberries and walnuts to the bowl
3. Pour Raspberry Walnut Vinaigrette on top of your salad4. Garnish with Romano cheeseI know not everyone loves walnuts so feel free to substitute it out if you need too. I like a bit of crunch with my salad so to me, that's the best part. By the time I'm done putting all the ingredients into a bowl, clean up my small mess that I always tend to make and set it on the table, the pizza is ready and we can all dig in! I love a meal that takes under 20 minutes to make and my family loves to dive in when it's ready to go! It's the perfect meal for the working Mom who needs something simple, fast and easy to do in 20 minutes!
