Jicama fries in the air fryer are perfect for days when you want to make some homemade fries but don't want to use potatoes. Jicama is a root vegetable that comes from Central America that has a slightly sweet flavor. It has brown skin and white flesh like a potato and is starchy and high in fiber.

Jicama also has essential vitamins that contribute to a healthy diet. The key differences between potatoes and jicama are that jicama can be eaten raw, they have a more nutty flavor than potatoes, and they are low-carb and low-sugar.

The good news is, because of their low sugar content, you can eat jicama fries on a keto diet or low carb diet! Air fried jicama fries have a perfectly crisp texture, and are a great alternative to regular fries (potato) which are restricted on a keto diet.

Other reasons why I love making these low carb french fries in the air fryer: there is minimal oil used when air frying, there's minimal clean up, and it's faster because you don't need to heat up the whole oven since you are using an air fryer! These easy to make fries are family friendly and so delicious too!

Jicama: This vegetable is also called a Mexican turnip or Mexican yam and has a juicy and mild flavor. It's a delicious low carb alternative to potatoes. Get ready for this to be your new favorite vegetable!

Olive Oil: A small amount of olive oil or avocado oil is needed to make crispy jicama fries.

Salt And Black Pepper: Salt and pepper are flavor enhancers. You could also add a bit of cayenne pepper for a bit more spice.

Rosemary and Thyme: Fresh herbs really make these fries shine! The sweet taste of jicama balances nicely with thyme, chopped fresh rosemary, and other herbs.

Prepare the Jicama: Peel the outer skin of the raw jicama with a vegetable peeler or paring knife. Slice the jicama into sticks.

Boil the Jicama: Bring a pot of water to boil and cook the jicama for 10 minutes until it begins to soften. Remove from the water and place the jicama on a paper towel lined plate.

Season the Jicama: Toss the slices in a large bowl with the seasonings and then place jicama slices in a single layer in the air fryer basket or trays (if possible).

Is jicama keto?

Yes! In 100 grams of jicama, there are 9 grams of carbs and 5 grams of fiber. Which means jicama has only 4 grams of net carbs! That makes it a very keto friendly vegetable.

How do you know when jicama is ripe?

The jicama is ripe when it's around 6 inches in diameter and not wrinkly or soft. If you see them at the grocery store, they are most likely ripe unless they've been sitting out for too long.

If you have extra jicama fries you can keep them in an airtight container in the fridge for up to 5 days. You can reheat them in the air fryer (at 350 degrees for 3-5 minutes) which will make them nice and crispy again. I don't recommend freezing these fries, as they will get mushy when they are defrosted.

Note: You can also keep the peeled, raw jicama in a container with water in the fridge to prevent them from browning.
