Air Fryer Boneless Skinless Chicken Thighs 
I took two packages of chicken out of my freezer to cook today, thinking they both held one boneless, skinless chicken breast.  What I had actually was one chicken breast and then a package of chicken thighs.  Note to self: Be much better at labeling what you freeze.
Anyways, I had to come up with two different ways of cooking them.  Today I am sharing how I cooked the chicken thighs and will post the chicken breast one in a couple of days. Don't worry none of it went to waste.

I was so impressed with the way that these chicken thighs came out that I felt I wanted to share it with you first!  They were fabulous!  This is a recipe that I adapted from one that I found on a page called Dash for Dinner
A few simple seasonings, some chicken pieces, a bit of oil, and you have juicy chicken thighs with slightly crispy edges.  And best of all, you can be enjoying them in less than half an hour.  
Such a simple make too. The hardest part will be trying to decide what you want to serve alongside of them!
This is a small batch recipe which feeds two people amply. You can double the recipe if you wish, but you may need to do it in batches depending on the size of your pieces of chicken and the size of your air fryer basket!

WHAT YOU NEED TO MAKE AIR FRYER BONELESS SKINLESS CHICKEN THIGHS
Chicken thighs of course, an air fryer, and a tasty assortment of spices.
  • 2 - 3 boneless, skinless chicken thighs (depends on size, if large two will be adequate)
  • 1/2 TBS light olive oil
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp sweet paprika
  • 1/4 tsp fine sea salt or kosher salt
  • 1/8 tsp black pepper

You could probably use bone in chicken thighs, but they will take considerably longer to cook.  You will need to cook them until the internal temperature reaches 165*F/74*C.  The juices will also run clear.
I use light olive oil.  Do make sure you don't use salts, but powders only. If you use garlic and onion salt, the mixture will be far too salty.
I used sweet paprika which doesn't have any heat to it. Smoked paprika is quite a bit spicier but will also lend a bit of a smoky flavor.

HOW TO MAKE AIR FRYER BONELESS SKINLESS CHICKEN THIGHS

This is really very simple to make. I would call it a real doddle.

Add the oil to a bowl along with all of the seasonings. Mix together well to a paste.

Open out your chicken pieces and pat them dry. Place them into the bowl with the seasoning paste, stirring to coat them generously with the mixture. Leave to macerate for about 10 to 15 minutes.

Preheat your air fryer to 400*F/200*C. (375*F/190*C for thinner pieces)

Transfer your chicken pieces to the air fryer basket, presentation side down. Leave about 2 inches in between each piece.

Air fry for 7 to 8 minutes. Remove from the air fryer and flip them over. Continue to air fry at 400*F/200*C. (375*F/190*C for thinner pieces) for a further 7 to 8 minutes until cooked through.

They will be done when the juices run clear, and the internal temperature is 165*F/74*C at the thickest part of the chicken.  Remove from the air fryer and leave to stand for 3 to 5 minutes before serving.

There are a multitude of air fryers available out there today.  I wanted to tell you a bit about my Air Fryer as so many people had asked.  Mine is a Kuraidori Multi Function Air Cooker/Fryer.  It does much more than just air fry, you can also bake in it, although so far, to be honest, I have not tried baking anything in mine!  I basically just use the air fry function!  It works very much like a small convection oven.
Mine also has a rotisserie in it, which I have used once or twice. My sister uses hers all the time. We got ours at our Local Home Hardware store. I've been using mine for about 3 years now without any problems whatsoever.
I don't think I would want to be without an air fryer now.

This came out wonderfully delicious.  I was very impressed. The flavors were spot on, and the chicken was tender and juicy with a little bit of a crispy edge.
I enjoyed this along with some fluffy mashed potatoes and steamed broccoli. It was a really fabulous dinner!
