Now that we’re officially into December, it seems only right to start talking about Christmas.
I’m going to dive right in by talking about the food. Being vegetarian or vegan at Christmas isn’t always easy, especially if you’re the only one or not doing the cooking yourself, but it shouldn’t mean you don’t get to enjoy yourself and eat lots of delicious food. To kick things off, here are three extra special ways to dress up Brussels sprouts this Christmas that are easy to make and a vegan side dish everyone can fill up on.
1. Roasted Balsamic Brussels Sprouts
Roasting Brussels sprouts with red onion and balsamic vinegar gives them a subtle sweetness and sophisticated twist.
2. Curried Quinoa Brussels Sprouts
The curried flavour may be unconventional for Christmas but the warming spices complement any Christmas dinner.
3. Pan-fried Brussels Sprouts with Tofu Bacon
A vegan take on this popular Christmas side dish, with crispy pieces of tofu bacon!
