We all know how well veggies cook on the barbecue, but did you know that fruit also works a treat cooked over coals?
This dessert is a rare occasion where I used real sugar – something you won’t find in my recipes very often. Whilst you could certainly use a refined sugar-free caramel sauce on the nectarines, I love simplicity of this recipe where all you need to do is sprinkle on the sugar and cinnamon then let the barbecue do its work. When you’ve been in the kitchen prepping the ingredients for your mains, it’s nice to have a delicious dessert with minimal effort. You could even mix things up and add a pinch of sea salt along with the sugar for a salted caramel version.
Once on the barbecue, the sugar begins to bubble before transforming into a thick caramel syrup. The nectarines soften to become juicy and sweet. It’s a perfect dessert to follow any barbecue and will impress vegetarian, vegans, and meat-eaters alike. Plus, it’s gluten-free so it really is a great, versatile option.
To serve, you can add a dollop of crème fraîche for a vegetarian option or coconut cream to keep it dairy-free and vegan. Alternatively, try it with a scoop of ice cream or dairy-free nice cream!

- 4 nectarines, sliced
- 2tbsp brown sugar
- 1tsp ground cinnamon
- 4tbsp crème fraîche or coconut cream to serve
- Take a large sheet of foil and gather the edges to form a low bowl shape
- Add the nectarines, sugar and cinnamon to the foil and place over the barbecue
- Allow to cook for around fifteen minutes, turning occasionally, until the sugar has turned to caramel and the nectarines are soft.
- Carefully remove from the coals and allow to cool for a moment (the caramel will be hot!). Serve with your accompaniment of choice.
