If anything, my sister is the one to watch (and hopefully she'll get a blog set up soon with a few pointers from yours truly) since she could give Mary Berry a run for her money. Anyway, today I'm not taking about cakes, more...salad and not just any salad...

Millennium and Copthorne Hotels have hotels across the UK and the world actually, with one located in Newcastle. It seems only right then, they would set a recipe challenge, aptly titled 'A Taste of Newcastle' and asked me if I'd like to give it a go.

As I've previously said, I'm no chef and the best part is, you don't have to be either. This recipe doesn't require many ingredients and you could always adapt it to your own taste. If you're not a fan of tomatoes, don't put them in, if you fancy a slightly more exotic dressing - give it a go! Cooking should be fun, so experiment and try your hand at something new. I never thought I'd be creating a dish in the kitchen on Saturday night while my family waited to see the finished result, but it's something I'd like to try again.

The dish consists of parma ham, mozarella cheese, a huge mix of salad and asparagus, plus a little pea purée. It's a fairly straightforward recipe to follow (though I'm still not sure where I was meant to add the mint...should it have gone in the purée?) and shouldn't take too long to put together. Plating it up in an attractive manner is an acquired skill that I don't quite possess yet. That being said, it seemed to go down okay!

I now have a lot of salad left over, despite preparing this for four people, so I guess it'll be mixed leaf salad on the cards for lunch for the rest of the week!
