And then we drink some more!
During his most recent visit, we continued our journey around The World of Whisky(e)y and landed in Tel Aviv, Israel (without ever leaving the lovely confines of The Garden State!) for a taste of what their Milk & Honey Distillery brings to The Murder Table. The two expressions that we sampled are both called Whisky In Bloom. One is called Double Cask, while the other is called Lightly Peated.
Here's a bit more information about both expressions courtesy of the Milk & Honey Distillery website:
Double Cask - This special edition of our Whisky in Bloom has characteristics that will reflect our future classic single malt whisky. A unique double cask bottling: ex- red wine STR and ex-bourbon, aged for only 12 months. Surprisingly well balanced and smooth, with dominant notes of vanilla and oak. It tells a story of time, climate, wood, and fine ingredients.Lightly Peated - This is a special single malt blend of three cask types: ex-bourbon, ex-red wine STR and ex-Islay casks previously used to mature peated whisky from Islay in Scotland. The ex-Islay casks provide an additional layer of light peatiness and maritime aroma. Each of the different casks contributes a complexity to the spirit, balancing and refining the different flavors for an intricate, lightly peated Whisky in Bloom.Our first experience with an STR cask (STR stands for Shaved, Toasted, and Re-charred) came via a recent Kilchoman Whisky release. That was one hell of a whisky, so we were curious to find out what the fine folks at Milk & Honey could do with the same barrel preparation.
