A Cure to that Craving.

The other day I had a craving for something salty and had absolutely nothing in our house but sweet potatoes and avocados.  Making guacamole was an option however I had no chips to go with it.  So I decided to attempt my first homemade Sweet Potato Fry Recipe. I have never been a huge fan of sweet potato fries. They are never crispy or salty enough, for my liking, so for this recipe I opted for a shoestring fry. 

First I preheated the oven to 450, then I peeled the sweet potatoes. {I used 4 for this recipe}

Then I halved them lengthwise.

And then cut them into wedges.

And then cut them again into the smallest pieces I could without them breaking.

Then I spread them on a baking sheet, drizzled a few tablespoons of olive oil on top, mixed them up a bit, seasoned with some salt, and baked at 450 for 30 minutes, stirring half way. You want them to be crispy and golden. You can add more salt at the end to taste if you’re craving it like I was :)

You can also boil the potatoes before baking for five minutes to shorten the baking time, and then remove them from the water with a spoon and then spread them in a pan and bake…. Ive heard that helps ensure the soft on the inside crispy on the outside effect. I haven’t tried it though. 

Due to the results of my baked recipe, I am no longer a “Sweet Potato Fry” hater. And your kids will love this healthy snack option. I know mine did!
