I love Pecans.

And I love Coconut.

Since I love them both, I thought hey, why not combine the two in this energy bar recipe? The combo ended up turning out amazing and so good for you! Packed with dates, coconut, and a variety of nuts, these bars are perfect for breakfast or a healthy snack and will keep your energy going for days!

5 Ingredient Nutty Coconut Bars {Gluten Free & Vegan!}

Ingredients:

1 1/2 C. Pitted Dates

3/4 C. Almond or Peanut Butter {I used almond}

1/3 C. Shredded Unsweetened Coconut

1/2 C. Pecans

Combine Ingredients in Vitamix or Food Processor. Pulse until medium to small crumbs, scraping the sides with a spatula periodically. Press ingredients into 8x8 baking dish, place in fridge for an hour. Slice into bars, and store in the freezer for optimum freshness!
