Nothing beats a delicious cocktail in the summer sun. Sadly, a lot of your favorite cocktails can be quite tricky to make at home. You need loads of equipment and copious amounts of spirits – it’s just too much effort! 

But, this doesn’t mean you can’t recreate stunning summer cocktails in your kitchen. In this post, you’ll find the best and simplest options to make when you want to feel refreshed and summery. 

Mexican Mule

Similar to a Moscow Mule, but with a Mexican twist. This is a very refreshing cocktail because it hits you with the freshness of the mint and the zing of the lime. If you want to know how to make a Mexican Mule, you’ll be pleased to know that it involves only four ingredients. Get your hands on some silver tequila, a lime, ginger beer, and some mint. The process is straightforward; mix everything together in a pitcher and pour over ice. If you have a cocktail shaker, that’s even better!

Sex On The Beach

Easily one of the most refreshing and delicious cocktails of all time. It’s right up there as a drink you simply have to have during the summer. The only alcohol you need is vodka – which most people have anyway – and peach schnapps. A good rule of thumb is to half the peach schnapps serving compared to the vodka. Then, add in some orange or pineapple juice, with equal quantities of cranberry juice. All of this can be done in a pitcher, and you stir it together then enjoy. If you’re feeling extra fancy, cut yourself a little pineapple wedge to serve atop your glass. 

Strawberry Mojito

A normal mojito is still a great summer cocktail, but this just adds a new level of vibrancy and fruitiness to it. The strawberries are excellent because they’re always ripe in the summer, meaning they’re extra juicy. Aside from this, you have all the normal ingredients in a mojito: mint, lime, rum, crushed ice, and soda water. You can mash up the strawberries however you want – a blender works best, but a potato masher is still effective. Then, add the other ingredients together in a pitcher, mix it all up and pour over the strawberries. A very easy cocktail that adds a twist to a classic – and is absolutely great for summer BBQs

Summer Sunset

This is a brilliant cocktail to make when you have peach schnapps left over from your Sex On The Beach. Essentially, the two drinks are very similar – both have vodka and peach schnapps, both have cranberry juice, and both can contain orange juice. The difference is that there’s no pineapple here and some lemonade instead. It makes the cocktail fizzy while bringing a more sour taste to it as well. Still, it’s beautifully refreshing on a hot day. 

There’s a lot to enjoy about all of these summer cocktail recipes. For starters, they’re all vegan and contain fruit in them! So, you’re bound to get at least one of your five-a-day…right? You can also make them without needing any extra equipment. Yes, a cocktail shaker or a blender can be useful, but they aren’t essential.
