I feel like sometimes bloggers can wonder why they’re doing what they’re doing if it seems like no one is using the recipes they post. I know that thought has come through my head a few times, but then I get a comment from someone saying that the recipe was a hit at a potluck they attended, or I’m tagged in an Instagram picture from a reader who spent their Sunday making one of my recipes.

Those are the times my heart gets all warm and mushy. I love that the lives of the recipes I create don’t end when the last bite is taken in my kitchen. They come back to life each time one of you makes a recipe of mine and shares it with your friends and family.

Just so you all know, when I get tagged in an Instagram post of yours, get a comment about a recipe, or get an email, I get a big dorky smile on my face and have a moment of pure appreciation, because seriously, you guys are awesome.

One of the reasons I love it so much is because I love hearing that a recipe worked well for you guys. Even though I know it worked for me, it’s reassuring to hear it works in all your kitchens too. Usually, when I’m posting something, I only know that it worked for me. This recipe has already been tested by a few of you though!

I got a few Snapchats back from some readers who had made them immediately! They all loved them, as did all the people I shared them with.

With just three ingredients, you can’t go wrong. Ingredient number one and arguable the most important is of course, the cookie butter! I used Trader Joe’s Pumpkin Spice Cookie Butter, which is unfortunately, like all things pumpkin spice, seasonal. If you happen to be reading this in the fall when it’s still around, try it! It’s a little bit of pumpkin spice magic. If you can only get your hands on regular cookie butter, you’ll still have some seriously delicious cookies on your hands.

A quick whisk and mix and the dough is ready to be dropped onto cookie sheets, baked, and cooled. The cookies will look underbaked in the oven, but you want to pull them out when the edges look just set and the top is still shiny. This will help the centers stay soft. They will continue to cook even after they’re out of the oven, but if you overbake them you’ll have dry cookies, and no one wants that.

3-Ingredient Cookie Butter Cookies   3-Ingredient Cookie Butter Cookies Save Print Prep time 5 mins Cook time 10 mins Total time 15 mins   Author: Rachel Conners Serves: 12 cookies Ingredients
  • ¾ cup cookie butter (I used Trader Joe's Pumpkin Spice Cookie Butter)
  • 2 eggs, room temperature
  • ½ cup all purpose flour
Directions
  1. Preheat the oven to 350°F.
  2. In a medium bowl, whisk together the cookie butter and the eggs. Add the flour and fold it in until thick dough forms. Place cookies on a parchment lined cookie sheet.
  3. Bake for 8-10 minutes or until the edges are set and the top still looks a little shiny (mine were perfect at 9 minutes). Do not over bake or they will be dry.
