Hi friends. Well, I promised you some easy vegetarian recipe ideas, and here I am back with this collection of 30 minute vegetarian dinners!
Can I be honest? It is hard to find easy, fast vegetarian recipes that have a source of protein. Sure there are a lot of cauliflower steak recipes (I’m sorry, but my body is not ever going to be tricked into thinking that cauliflower is a meat substitute), there are lots of pastas tossed in nut butters, or sauces made from veggies. Those are going to fill me up for about 5 minutes. Tracking down healthy, delicious, and filling (translation: protein-packed) vegetarian recipes was a challenge!
Here’s my criteria for this round-up: Ready in 30 minutes. Packed with veggies. A source of carbohydrates. A substantial source of protein. And of course: the yum factor! I think I found us some good ones!
