10 Minute Vegan Apple Pie (for Two)

You don’t have to be vegan to enjoy this one. I found this delicious and simple dessert on the web completely by accident, and then altered it a bit. I think it’s for two people, (or two servings) because I feel that it comes out too big for just one person. If you want to make this gluten-free, then use gluten-free flour and oats. If you’re not vegan just sub in regular unsalted butter and regular flour and have at it!  It’s really easy. Enjoy!

 Ingredients:

Topping

  • 2 tablespoons vegan butter
  • 2 tablespoons turbinado sugar
  • 2 tablespoons oatmeal
  • 2 tablespoons all-purpose flour
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon ground nutmeg
  • ⅛ teaspoon ground cloves
  • pinch salt, optional and to taste

 

Apple Filling

  • 1 large apple, diced (I used granny smith)
  • 1 tablespoon vegan butter
  • 3 tablespoons turbinado sugar
  • 1 teaspoon cornstarch
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ground nutmeg
  • ⅛ teaspoon ground cloves
  • ⅛ teaspoon ginger
  • a pinch of allspice
  • a pinch of salt
  • Extra large mug or small bowl*

 

Directions:

Topping:

- Soften the butter and mix all ingredients in a small bowl and set aside

Filling:

  1. Put butter into the bottom of the dish or mug and throw in the apples on top. Microwave the (now softened) apples and butter for one minute
  2. Remove from microwave and stir to coat all of the apples with the melted butter
  3. Add in the rest of the ingredients and and toss again to coat.
  4. Crumble topping across the top of the apple mixture and microwave again for 1.5-2 minutes on high, or until the topping turn soft and the apples are bubbling. Do NOT overcook.
