What I Ate: Sweet 'n' Sour Meatballs

What I Ate: Sweet 'n' Sour Meatballs Welcome to a new feature here on MC+M! I've decided to expand my horizons here just a little. Since I've got so many (no really, so many) recipes pinned on my Pinterest page, I've decided I'm going to cook them all. Hopefully. And share them with you. And so, What I Ate was born!
I've been lackadaisical and underwhelmed with my outfits of late (hence the large periods of radio silence) and despite sharing my photographic exploits, I'll be sharing what I cook, as well. Up first, sweet 'n' sour meatballs!  This is a recipe my mother dredged up from somewhere, and it's one of my favorite things to eat. It works equally well with turkey meatballs as with beef, like I made here (yes, I made my own meatballs!
What I Ate: Sweet 'n' Sour Meatballs To make the meatballs:
- 1 package of ground beef (I used 93% lean) or turkey
- Garlic powder
- Onion powder
- Salt
- Pepper
To make the sweet 'n' sour:
- 1/2 cup packed brown sugar
- 1 tablespoon cornstarch
- 1 can pineapple chunks
- 1/3 cup vinegar
- 1 tablespoon soy sauce
- 1 small green pepper, coarsely chopped

I apologize in advance for the lack of measurements. I just dumped what I thought was a good eyeballed the amount of spices for the meatballs.
Dump package of meat into a mixing bowl. Break up so it is not package-shaped. Add above-mentioned spices (and any others you think would be good) and stir thoroughly. Using a spoon and your clean hands, scoop out a spoonful of meat and roll into a ball. Continue until you have used all of the ground beef.
What I Ate: Sweet 'n' Sour Meatballs Add a tablespoon of olive oil to a frying pan and drop meatballs in. Cook them all the way through, making sure they are browned on each side. Remove meatballs from the pan and set them aside.
What I Ate: Sweet 'n' Sour Meatballs Drain fat from the skillet. Mix brown sugar and cornstarch in the skillet. Stir in pineapple (w/ syrup), vinegar, and soy sauce. Heat to boiling, stirring constantly; reduce heat.
What I Ate: Sweet 'n' Sour Meatballs Add the meatballs. Cover and simmer, stirring occasionally for 10 minutes.
What I Ate: Sweet 'n' Sour Meatballs Stir in the green peppers (and onions, as I chose to include those). Cover and simmer until they are crisp-tender, about 5 minutes. Serve with rice.
And you're done!
