I have such a lovely selection of recipes for you this week that I am actually really excited. I am gradually increasing the blogs that I monitor which does mean I cannot spend as long reading all the posts but it does mean I can bring you some of the best recipes out there every week. All the recipes pictured above are detailed below starting at the top left hand corner and working clockwise:
  • My first recipe is the perfect snack to serve when you have guests, who would not love these Vegan Guacamole Potato Skins with Ranch Dressing from 40 Aprons. Cheryl is great at creating recipes that are quick to make and really tasty and this definitely falls into that category.
  • Now for a truly indulgent breakfast from This Rawsome Vegan Life. When I want something a bit special I will be trying out this Breakfast Berry Smoothie with Cacao Drizzle & Chia Pudding. There is only good stuff in this smoothie but you will feel like you are having a real treat, so go on, spoil yourself!
  • I am a bit of a fan of Seitan and so when I saw this recipe for Seitan Jagerschnitzel on Veg Kitchen I just had to include it. This recipe is actually from the book Vegan without Borders by Robin Robertson which is a book I recently found on Amazon and have added it to my wish list. It can try this recipe as a starter.
  • Salted Maple Dark Chocolate Raspberry Crumble from Vegetarian Ventures is my next offering and seriously you will not be disappointed by this recipe it is completely stunning and the perfect dessert when you want true luxury.
  • We have definitely reached soup season and that is no bad thing and actually makes recipe writers more creative as there is so much you can do with a soup. The second I saw this Kabocha Squash, Fennel and Ginger Soup with Spicy Coconut Cream I knew that it would be a real winner. It looks beautiful and is one I have to try!
  • My last recipe from Peachy Palate is my idea of heaven. This Deep Dish Caramel Apple Paleo "Cheesecake" looks so amazing I think I might make it my birthday treat on Monday.
I am sitting here writing this post getting together interesting bits to share with you and finding it almost impossible to stay focussed. It is just one of those weird days and it is literally taking hours to write this post. I keep wandering off track to look at something else online and just letting my thoughts go off. I am sharing it with you because writing this post is a bit like the process of meditation. When you meditate you try to focus your mind on one thing but inevitably it wanders off and you have to catch it and bring it back to focus. When you think of it this way many of do not realize how often we employ meditation techniques in our everyday life and how we could all easily spend 5 minutes meditating each day. Anyway on to the interesting links and other little bits:
  • Nicely linking on from what I was writing above I found this great infographic on Yoga Dork which is a Skeptic's Guide to Meditation.
  • I had a bit of a shock when I read this article on Veg News about Vegetarianism Being More Popular in UK that Ever Before. I had no idea how much it had grown but we are now at the levels of 1 in 8 but in those aged 16-24 it is actually 1 in 5 which just shows how much the world is progressing.
  • As an addition to the above I loved this article on 10 Reasons to Get Your Milk From Nuts instead of Cows from One Ingredient Chef. If you read this and still want to drink milk then there really is something wrong with you.
  • There is one bit of exciting news from my life and that is I have a permanent class, well I am covering for someone on maternity leave so it is permanent for a little while anyway. It is a restorative class on Wednesdays at 10:30am ay Rhythmix Academy of Dance in Potters Bar which is a lovely little studio that is intimate and a lovely place to practice yoga.
  • There is a great article on the benefits of laughter in the Health section of US News that is well worth a read.
  • This article on How to Motivate Movement with Music on Sunwarrior really made sense to me. In many of my yoga classes I use music with a different theme and at different speeds to get certain reactions from those in the class and for me personally I think it can increase my sense of meditation greatly.
  • Finally you know I always like to bring you something uplifting and that normally comes from Tiny Buddha and this week is no exception. I loved this post on Letting Go of Expectations and Letting You Find Joy so go out and get your joy!
