Viva Paella!

Getting involved in the World Cup! A homage to Spain playing tonight! Viva Paella! 

This baby is packed with protein and fiber and we’ll as being super low fat. Really quick and easy too. Olé! 

 

2 tbsp olive oil

2 medium onions, sliced

4 cloves garlic chopped

1 green and 1 red pepper, cored and diced

1 cup (that’s cup and not mug) of peas (frozen are fine)

1 carton chopped tomatoes

1 tsp paprika

1 tsp tumeric 

800ml vegetable stock

1.5 cups brown rice

Lots of fresh parsley

Good quality rock or sea salt

Lemon wedges and sundried tomatoes

 

Fry off your onions first, then the other veggies and garlic. 

Stir through the rice, tomatoes, stock and spices.

Foil cover the pan and simmer for 20 minutes. Olé!
