Vegetable Fried Rice

Quick dinner in under 20 minutes!

Ingredients:
60g Uncooked Rice
1 tbsp oil
1 Garlic Glove
Chopped fresh ginger
1/2 Small Red onion
1/3 Aubergine diced
1/2 Red Pepper diced
1/3 courgette diced
2 eggs
Splash of soy sauce
Piri Spice
Tomato Ketchup

Vegetable Fried Rice

Chop all the vegetables

Mix up the egg yolks

Vegetable Fried Rice

Cook rice as normal ( water and rice)

Drain and leave to the side

Heat oil in a fry pan, add garlic and ginger and vegetables. Cook until softened and cooked.

Slide the vegetables to the side of the pan, and add eggs to the other side

Scramble the eggs until cooked

Mix eggs and vegetables together

Vegetable Fried Rice

Add the cooked rice to the fry pan

Add the spices of choice ( I used Piri) and soy sauce stir.

Add tomato ketchup and serve with a cooked corn on the cob!
