Vegan “Cream Cheese” & Spinach Poppers

 🍃 Vegan Cream “cheese” Spinach Pops 🍃 My husband requested these. It is a very rare occasion that I will eat bread. Especially when Riley is gluten intolerant and Charlie isn’t allowed it because it turns him into Angry Charlie 😈. I made some gluten free ones for the boys, they loved them! They obviously won’t rise or be quite so fluffy but they were still delicious.

🐞 Bread Dough Recipe:

3 cups flour (GF or other)

1 sachet yeast

1 tbsp mixed herbs

2 tbsp nutritional yeast

1/2 tsp rock salt

2 tsp oil (I used rapeseed)

Enough warm water to make dough (I never measure it sorry! I’m assuming 200 ml? )

🐢 knead for 10 minutes, cover and rest for 10 minutes (the dough, not you🙈) 🐙 Spinach Cream Recipe:

1/2 pack tofu (I use Yutaka)

2 handfuls shredded spinach

1 tbsp lemon juice

1 tbsp nutritional yeast

Pinch salt

2 tsp oil (I used rapeseed)

🐝 Wilt the spinach in a pan with a little garlic powder.

Blend the tofu and other ingredients. 

Combine the spinach and tofu mix in a bowl. 🐛 Roll the dough to 1/2 cm thick. Cut out rounds to line a muffin tin.

Add 1 tsp spinach mix to each and transfer to the oven.  Bake at 220 degrees for 10 mins approx.
