One of the things I enjoy most about being vegan is the opportunity to experiment with new recipes and ingredients.  I guess it's the adult version of playing with your food!A vegan diet can admittedly feel restricting at times, and the ability to dress up and redesign the way you approach some of the more common foods in your diet is critical.Did you know that thyme, in addition to being wonderfully fragrant, is also a digestive aid?  Like radishes, it aids in fat digestion.  I also learned that is has some medicinal properties, making it well-suited for when those harsh winter colds set in.  I saw one recipe where they mixed thyme, parsley and garlic together with cream cheese (obviously I'd use Tofutti) as a delicious topping ~ perhaps on a bagel or with a dinner roll.  I am sure those same ingredients would also work beautifully in non-dairy margarine or an herb-infused olive oil, either for dipping or basted on a baked or grilled flatbread.  You can also use it as a seasoning for a homemade mustard vinaigrette or on roasted vegetables with sea salt.What recently intrigued me about thyme is that some sources say it's used in spells for love!  I'm not a believer in things like love potion #9, but maybe it's worth checking out thyme's aphrodisiac properties ~ just on the off chance...
