Wheatmeal Banana Bread with Walnuts and Raisins ------------------------------------------------------------------------------------ Makes 1 loaf of bread * 18-20 slices 1 1/2 C. Wholemeal flour 1/2 tsp. Baking soda 1 1/2 Baking powder 1/4 C. Oat bran 1/2 C. Rolled oats, cooked 1/2  Vanilla bean or Vanilla essence 1/4 C. Vegetable oil 2 Tbsp. Brown Sugar 1 tsp. Honey 2 Medium-large eggs (I use free range eggs) 1/2 C. Milk 2 Medium ripe bananas, mashed 1/4 C. Walnuts -chopped 1/4 C. Raisins Preparation: Pre-heat oven at 180C. Grease a loaf pan or cake pan and set aside.
In a bowl add dry ingredients (wholemeal flour, baking soda, baking powder and oat bran) Mix well. Add mashed bananas, cooked rolled oats, brown sugar, honey, vanilla, milk, eggs, oil, walnuts and raisins. Mix until well combined. Pour the mixture in the prepared loaf pan and bake for 40-45 minutes or until a skewer or knife inserted into the center comes out clean. When ready turn into a rack and let it cool completely.
