Hello friends, I know is a little late to say “Happy New Year” but I hope you had a wonderful start of this 2019 and a good holiday season. Our beginning of the year was nice and for the most part, we spent our holiday break enjoying summer, resting, sightseeing and talking about life and family. The last year and a half, things have been taking a different shape on the personal side for me. And so, I decided to step aside from blogging after my last post to be able to spend more time with my family and also to reconnect with myself again. I was becoming emotionally exhausted and it was getting challenging for me to find a balance between both sides of my life.
When I started this blog there by the end of 2009 I did it because I wanted to explore all those creative things that felt true to my heart. And my intention is to always keep it that way. During all these years I’ve been fortunate enough to have my family love and support to continue nurturing this little project of mine. And I don’t take this for granted. I truly love creating recipes, I love food styling and photographing everything I share here but I also love my family life. I began to feel disconnected from my creative self and I was getting lost between one thing and another and so in order to continue to be authentic with myself and here in this little space called “AlDente Gourmet” I knew I needed to detach myself from blogging. And focus on my emotional health.
I knew this was the right thing to do not only for me but for those of you that have shown me your support and friendship for all throughout many blog posts. 
So it took me a while to know what would I do. And now what have I learned from all this experience? 'Being Human' is part of who I am and although sometimes living in a digital age supposes the opposite for many. It's all right to keep being human. I’m going to keep updating the blog and sharing with you my recipes and wellness inspiration tips but I will do so in a more natural gentle way, taking things slowly, and whenever I feel connected with my inner muse.    Thank you and I hope to see you soon! SIMPLE VANILLA CUPCAKES RECIPE

Make 12
2 1/2 C. Self- Raising flour, regular or gluten-free
1 1/2 tsp. Baking powder sifted
1/4 tsp. Aluminum-free Baking soda sifted
Pinch of Salt
1 tsp. Vanilla essence or to taste
3 Organic or Free Range Medium Eggs
1/2 C. Sunflower oil
1/2 C. Milk of your choice, either plant-based or regular
3/4 C. Honey or to taste
Preparation: 
1- Preheat oven at 180C/350F.
2- In a bowl add dry ingredients mix and make a well in the center.
3- Add eggs, milk, sunflower oil, vanilla essence and start mixing. Finally, add the honey and mix a little bit more until everything is well combined.
4- Divide batter among lined cups, filling each three-quarters full. Bake for 15-20 minutes.
5- When ready let them cool and then sprinkle with powdered sugar! 

These cupcakes are perfect to take to work or school or to simply enjoy with a nice cup of tea in the afternoon!
