Skillet Banana Bread

Who loves their cast iron skillet? I do! I’ve had one forever and I use it just about every week. I love how versatile it is. You can start things on your stove, then throw it in the oven. I’ve made just about everything in there except when I saw this recipe on Pinterest – I said to myself “I’ve never made banana bread in my skillet!”

This took about 5 minutes to make and it baked for about 25 minutes, so in no time flat you can have an awesome breakfast or dessert for your family!

Ingredients

  • 1/4 cup plus 1 Tablespoon room temperature, unsalted butter (divided)
  • 1/2 cup sugar
  • 1 egg
  • 1 1/2 very ripe bananas, mashed
  • 1/4 tsp. vanilla
  • 1 cup flour
  • 1/2 tsp. baking soda
  • 1/8 tsp. salt
  • 1/4 tsp. cinnamon (optional)
  • 1/2 cup chocolate chips

Instructions

  1. Preheat the oven to 350 degrees F. along with the cast iron skillet. Mix the dry ingredients together and set aside.
  2. Beat the 1/4 cup butter and sugar together with an electric mixer. Beat in the egg, mashed banana, and vanilla.
  3. Fold the dry ingredients into the creamed butter mixture with a wooden spoon.
  4. Melt 1 T. of butter in the skillet. Pour in the batter and bake for about 20 minutes, until the center feels done to the touch.
  5. 5. Cool about 5 to 10 minutes.

The original recipe called for baking it for 20 minutes, at the 20 minute mark, mine was a little soft in the middle so I cooked it for another 5 minutes. If you insert a toothpick and it comes out clean then it’s done.

My daughter cut a warm piece and slathered a little nutella on top and deemed it incredible. This was so good, the whole skillet of banana bread was gone in 2 days!

I will definitely make this again.
