Secret Recipe Club Goat Cheese and Mushroom Pizza

Pizza. It is one of my favorites foods. I could probably eat it everyday. There are so many combinations and it is so easy to make it at home. I definitely have my favorite pizza places (Pizzeria Lola & Davani’s) but I would stay what I make is pretty high up on my list!

 

I was browsing all the recipes on Opera Singer in the Kitchen, she is an opera singer (I could guess that from the title) a Mom to two and a lover of food. That is a great combo. As I was browsing I came across a great pizza with goat cheese, apple, prosciutto and balsamic glaze. Everything about this pizza sounded amazing. And it was.

 

We ended up using mushrooms instead of prosciutto and mixed green for the arugula because the grocery store was out of both. How and why you are ever out of prosciutto I will never understand but I was not about to go to another store for one ingredient. Mushrooms it was and they were delicious!

Mushroom Pizza

Secret Recipe Club Goat Cheese and Mushroom Pizza

Ingredients (Serves 4)

  • 12 oz. fresh goat cheese; room temperature
  • 1 cup sliced mushrooms
  • 2 Tbsp. olive oil; more as needed
  • Fresh black pepper and sea salt; as needed
  • 2 large, firm and tart apples; peeled and cored; sliced 1/8-inch thick
  • 1 thin pizza crust (store bought or homemade)
  • 2 cups mixed greens
  • juice of 1 orange
  • juice of 1/2 lemon

Instructions

Preheat oven to 425 degrees Fahrenheit. Place pizza dough on a baking sheet or pizza stone.

Mix the goat cheese, olive oil, salt and pepper together. Gently spread over the pizza dough about one-inch away from the edge.

Place apple slices over the goat cheese in a angled pattern. Add the mushrooms over the apple slices. Drizzle with olive oil. Sprinkle with fresh black pepper.

Bake pizza for 18 minutes or until somewhat golden.

Remove pizza from oven.

Prepare mixed salad with dressing. Top the pizza with the salad and pepper.
