August? How is it August already? I feel like this summer has gone by so quickly, granted we have been really busy but it’s almost State Fair time in MN. And that means the end of summer. Sigh. But we have a packed fall with a few trips that I am really looking forward to.
One part of August that I always look forward to is the Annual Wine Tasting at Saint Croix Vineyards, it ends up being a huge group and we take over their deck and buy bottles of wine to share and enjoy delicious food. Since I am known as “the healthy eater” in the group I had to live up to my name. And I figured it would be a great time to make my
Secret Recipe Club pick for this month. I spent about 20 minutes going through the lovely Sara’s blog, Cupcake Muffin, looking for something tasty to make.
Sara is a big baker and I thought about doing that but then her Carrot, Cumin & Feta salad caught my eye.
Shredded Carrot and Feta Salad

- 1 bag of shredded carrots
- 1 bunch cilantro, chipped
- 4 ounces feta cheese, crumbled
- Salt and pepper
For the Dressing
- 4 tbsp olive oil
- Juice of 1 lemon
- Zest of 1 lemon
- 1 tsp cumin
In a bowl combine the carrot, cilantro, and feta. Season to taste.
Whisk the olive oil, lemon juice and zest and the cumin together. Season to taste and pour over the salad. Stir to combine and stir immediately or chill for 2-3 hours.

Perfect for a warm sunny day at a wine picnic. I just had this sitting inside a bigger bowl with ice and it went quickly at the party! If you want this salad to come together in a matter of minutes by the pre-shredded carrots. Add in the feta and make the dressing. So easy.
