Roasted Tomato Capsicum Raita

I often prepare one pot meals.These kind of preparations are best suited for summer as we don't need to slog near the stove bearing the heat. What else can be a best side dish for one pot rice dishes other than raita :) I often play with ingredients and try to change the combination of ingredients and see what we like best.This roasted bell pepper and tomato raita was one of my recent trial which was a big hit.Roasting the tomatoes and bell pepper until a bit charred brings out a lovely smoky flavor and taste and goes very well with any kind of mild flavored rice. I served this with my no oinon-garlic pulav and the whole meal was just awesome

Roasted tomato capsicum raita
Ingredients:
1 large tomato chopped
1 large capsicum (green) chopped
1 small piece of ginger crushed
2 dried red chillies
1 cup curd
Salt to taste
Oil
Method:
1. Heat little oil in a kadai and saute capsicum and tomato for ten minutes until charred and remove to a plate
2. In the same kadai saute dried chilli and ginger for two minutes and remove
3.Blend everything coarsely with salt,and mix well with well beaten curd.Serve with fried rice or paratha
Time: 20 mins
Serves: 4
