Roasted Red Pepper Spread

This is the first time I made this recipe. I love red peppers – and roasting red peppers is even better. I was trying to think of something that I could make for the Chicago Food swap I went to over the weekend and I thought it was a great choice.

I modified my recipe from another food blogger at First Look, Then Cook.. I loved the taste and it was a big hit at the food swap.

There are different ways you can roast a red pepper. Of course you can buy them in a jar already roasted. You can roast them in the oven, but since it’s summer, I opted to char them over my gas burner on my stove.

Wash the red pepper (take off the sticker!) and just place over the gas burner. Keep turning it over and over until it’s black on all sides. I did 4 peppers at a time on all 4 burners which cut down on the time to make this dish.

After it is charred, place in a bowl and cover with saran wrap. Wait until cooled. The steam will help soften the pepper and make it easier to take the skin off. Do NOT rinse the pepper under water to remove the skin, because it takes away the roasted flavor you just worked for! I was able to easily take the skin off and if a little of the char is left, that’s OK! If you are having trouble you can use a sharp knife.

Super easy to make - I tripled the recipe since I was making it for the Chicago Food swap. Great served with chips, crackers, veggies, as a spread on a sandwich, with eggs - lots of possibilities!!

Ingredients

  • 1 large roasted red pepper
  • 2 garlic cloves, coarsely chopped
  • 3 ounces cream cheese at room temperature, cut into chunks
  • 2 parsley sprigs
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon dried basil
  • 1/4 teaspoon paprika
  • 1/4 teaspoon salt
  • 2 drops of Tabasco sauce
  • 1 tablespoon olive oil
  • 1/8 cup water

Instructions

  1. Char the pepper as described above.
  2. Add all the ingredients into a food processor or blender (I used a blender).
  3. (I added the water and olive oil to help blend it smooth)
  4. Chill until ready to eat!

I will definitely make this again – so good! This would be a quick dish to make for a party – or for a weekend night snack before dinner with a few drinks!
