Rhubarb and Vanilla Overnight Oats

Creamy coconut rhubarb with vanilla overnight oats. Topped with coconut sprinkles and slivered almonds 😋

I have tonnes of rhubarb growing in my garden and I’ve never bothered with it. Until now…totally yum 😆

So this is technically not  #fullyraw as, although you can eat it raw, you wouldn’t really want to! 

I sautéed it in a little water, stevia (1 tsp) and vanilla essence until soft, mixed it with whipped coconut cream and splodged it on top of my oats. Divine!
