Recipes for Free: Buffalo Wing Style Cauliflower Pizza w/Udi’s Pizza Crust

Buffalo Cauliflower Pizza IIThe idea for this Buffalo Wing Style Cauliflower Pizza was born earlier in the year around super bowl time. The super bowl is always the perfect time to splurge so I went all out as they say with my meat-less take on the classic buffalo wing pizza. Unfortunately, fibro threw a wrench in my plans that weekend and I ended up bedridden succumbing to a terrible flareup. I never got a chance to make it until now. This is the perfect guilty pleasure for a weekend splurge as it is quick and easy to assemble and uses Udi’s always amazing ready to bake pizza crusts. Check out the recipe below!

Buffalo Wing Style Cauliflower Pizza
3 tablespoons buffalo wing sauce + extra to coat the pizza crust
2 celery stalks, finely diced
1/4 cup banana pepper rings
1/2 free apple peeled cored and thinly sliced
1/4 + 2 tablespoons Marie’s chunky bleu cheese
1/2 cup cubed extra firm tofu
1 cup cauliflower florets, broker into small pieces
1/2 cup fresh raw mozzarella cheese
1 Udi’s pizza crust
1/4 cup grated parmesan cheese
2 tablespoons crushed red pepper

1.    Coat a baking sheet with baking spray and lay cubed tofu and cauliflower in a single layer. Bake for 20 minutes at 375 degrees.
2.    Add cabled tofu and cauliflower to a medium mixing bowl and toss with buffalo wing sauce. Set aside.
3.    Spread a thin layer of buffalo wing sauce on pizza crust, parmesean, then a layer of bleu cheese, sliced apple, celery and banana pepper rings.
4.    Then top pizza with cauliflower and tofu mixture, mozzarella, and red pepper flakes. Bake pizza for 12-15 minutes. Allow to cool for 5 minutes before serving.
