I'm loving trying out new recipes using pumpkin, so my breakfast pumpkin creation is pumpkin waffles! Yes a pumpkin waffle, now is the US these are actually more common than here in the UK, but until you try one you'll never know.

Pumpkin Waffles

I recently purchased a waffle maker, and probably one of my best gadgets, as it's incredibly easy. The kids and hubs are loving waffles, and you may well see more waffle recipes making an appearance on my blog. If you have children who like pancakes then I would recommend purchasing a waffle maker, they are relatively inexpensive about £20 from your supermarket.

Pumpkin Waffles

The waffle maker is pretty unique, I'm not sure if they all have this feature, but mine you have to flip over within about 10-15 seconds to make sure the batter is evenly distributed.

Pumpkin Waffles

Ingredients
2 Eggs
3 Tbsp Sugar
300ml Buttermilk
100g Melted Butter
200ml Pumpkin Puree
400g Plain Flour
2 Tsp Baking Powder
1 Tsp Baking Soda
1/2 Tsp Salt

Pumpkin Waffles

In a large mixing bowl add eggs and sugar and whisk

Add buttermilk, pumpkin puree and melted butter into the eggs and whisk

Pumpkin Waffles

Add plain flour, baking soda, baking powder and salt to the wet ingredients

Pumpkin Waffles

Whisk until smooth with no lumps

Pumpkin Waffles

Pour 1/2 cup -2/3 cup of batter into a pre-heated waffle maker.

Pumpkin Waffles

Cook for few minutes depending on your waffle maker

Serve immediately and add toppings of choice.
