Pickles!

It's a snow day where I am and the timing couldn't be better.  I'm spending it in bed fighting off what I hope is just a passing cold.
I'm drinking coffee (after more tea and DayQuil than I could stand) and watching the Food Network. I admit I was watching Days of Our Lives but then Mayor De Blasio interrupted to talk about snow and I just couldn't listen to him go on and on!
Melissa D'arabian is cooking for $10 or less. Most of what she's cooking is nothing I can eat, but she got my attention with pickles! When I was younger, maybe in high school, my dad tried to make pickles. Some batches were better than others (love you Dad!) and this made me think of him. She is using optional items like garlic and red pepper flake but I know he used coriander. Either way, this sounds so simple I think I have to try it:
3/4 cup water 1/4 cup white vinegar1 TBSP sugar1 TBSP salt2-3 TBSP minced onion 
Bring all ingredients to a boil and then pour over 2 small peeled & sliced cucumbers. Of course you can also leave them whole, or use other vegetables like carrots, cauliflower or onion.  These were being made to top a sandwich which was totally NOT vegan, so that recipe is not going to be listed here!
To make sure the pickles are crunchy, don't let them sit in the liquid for too long, and refrigerate them before eating. I hope you like them!(photo by tlaststand.wikia.com)Pickles!
