Photo Story of Apricot & Walnut Muffins

Happy New Year, People!!
What special memory did 2014 left with you? I found my love in baking and looking forward to 2015 with lots of food photo stories, recipe reviews, and everything “Handmade and Homemade.”
What could be better to start the year than with muffins? So, I baked “Apricot and Walnut breakfast muffins” which is a quick to make recipe and definitely worth a try.  It works not only for breakfast, but any time snacking.
Arrange the shop bought muffin cases in the muffin tray or on a baking tray if you don’t have the muffin tray.

Love the combination of walnuts and apricots.

Preheat your oven, throw in all ingredients together and mix them well. I tweaked the recipe by adding some chocolate chips in the mixture.

Divide the mixture in between the muffin cases and put them in for baking!!!

Pour on some maple syrup and enjoy them warm.

It’s better to consume them fresh and warm, as a day older it becomes a little dry. I followed Mary Berry’s recipe from the book “Cook Now, Eat later.” Enjoy…!!! :)
