Philly Steak Sandwich

We have a lot of roast beef leftover. The first thing that came to mind was this Philly Steak Sandwich we had when we were in the States.  It was really yummy.
So here is mine just based on my memory.  I did not have Provolone cheese or American cheese, I just make do with whatever cheese I have in the fridge.  Cheese choices aren't that many in the supermarket unless you go to the Gourmet shop but I have no intention of going out during this period.
Philly Steak Sandwich
What you need:
Roast Beef, sliced thinly1 yellow onion, sliced thinlyCapsicum, remove seeds and sliceCheddar cheese
Crusty Roll
Method:
Heat a pan with oil and saute onion until soft and caramelised.  Set aside.
In the same pan, saute capsicum until soft and add onto the cooked onions.  Season with salt and pepper.  Set aside.
In a clean and very hot pan with added olive oil, saute beef until brown.  (I also added a little of the leftover gravy)
Assembly, add on roast beef, onion and capsicum and cheese.
Give it a heat up in the oven for the cheese to melt.
Serve hot
