Mini Peach Cobblers Living in the South the last two years has sure taught me how to cook some delicious meals. Being in Georgia ( aka the PEACH state ) has also upped my love for all things peaches! Truth be told, cobblers are my favorite thing to devour ( my mother in law has me hooked with so many of her amazing recipes that she creates ! ) and I wanted to take my stab at creating my own cobbler that my husband and our family can enjoy too. My family and I arrived home late last weekend after a full week at the ocean with my family members and I was feeling rather nostalgic as summer was ending and we were getting into fall. Don't get me wrong, I love the cooler weather when it comes but I wanted to think of how we could keep summer alive just a few minutes more. Mini Peach CobblersMini Peach CobblersBINGO! Peach Cobbler it was and boy oh boy did my toddler and husband gobble it up in minutes! Phew! Now, I'm not just saying it, but it really was one of the best cobblers I've ever made which means you'll want this recipe and make it for yourself and your family like..now! Thanks to Luck’s Fried Peaches with Cinnamon I had almost everything I needed to make this delicious and easy dish! It's not only easy to make and eat but you can take it with you on the go! Seriously, how adorable are these mini peach cobblers?! You'll want some to take with you, your friends, your coworkers..oh heck just take them all to everyone!Here's what you'll need! Ingredients1 cup all-purpose flour2 teaspoons baking powder1/2 teaspoon salt1 cup milk2 (15oz) cans Luck’s® Fried Peaches withCinnamon(drained)1 cup sugar1/2 cup butter Directions:1. Preheat oven to 350 degrees2. Put 1 tsp of melted butter into each regular sized muffin tin3. Combine the first 5 ingredients by hand4. Put 2 tbsp of batter into each regular size muffin tin ( on top of the melted butter )5. Put 1 tbsp of Luck's Fried Peaches and Cinnamon on top of the batter6. Sprinkle with brown sugar and extra cinnamon. ( Can be a generous sprinkle )7. Bake at regular size muffin tins for 12 minutes8. Let them cool almost completely before taking out of the pan9.
