Making Pasta

By Thehousethatlarsbuilt @houselarsbuilt
Making pasta This is the third part in a series I’m doing with Craftsy, an online crafty class platform. They gave me the opportunity to take four of their classes and this time it was Homemade Italian Pasta with Giuliano Hazan (and psst: I’m giving an awesome deal on it here). Trisha Zemp, who you know as my trusted photographer here on the blog, took the class with her husband and they had a ball making it for date nights. I, on the other hand, am a great eater and non-cooker so I am the happy and gracious recipient of some of their pasta making sessions. Score! It's a symbiotic relationship.Making pastaMaking pastaTake it away Trisha:
Giuliano Hazan, the teacher of the course, is truly the expert on the subject. Listen to this: he studied at Marcella's celebrated School of Classic Italian Cooking, authored the international bestseller The Classic Pasta Cookbook, which was nominated for a James Beard Award. AND, he's a popular guest on The Today Show. You can understand why I felt rather honored to take his class.
Giuliano taught in a very easy way to understand and follow. He didn’t leave anything out while teaching so while making pasta you never felt lost. We learned all types of pasta including stuffed pastas. Since the receipes were ones that had been handed down over the generations they felt special and they are delicious!
I learned that pasta is finicky and doesn’t like cold temperatures (probably why it started in warm Italy!). The greatest tip I learned was not to rinse pasta EVER! The starches left over will help the sauce stick to the pasta. Additionally, always salt the water you boil your pasta in. That’s how it adds so many flavors.Making pastaMaking pastaMaking pastaGiuliano generously provided his grandmother’s beef bolognase sauce and it blew my mind. The trick is to let it simmer for FIVE HOURS! You won’t regret the wait.
