Paletas or Mexican popsicles

Cinco de Mayo isn't about paletas, which means Mexican popsicles, per se. 

But I'm sorry, but Strawberry Agua Fresca paleta sounds mighty "Cinco de Mayo party" to me. 

Especially when you're looking for an all-natural and different type of treat to incorporate into your Cinco de Mayo party.

So, for all of you trendsetting party mavens out there... this Mexican popsicle craze is something you want to get in on, before everyone else that you know finds out about it.

But quite honestly, there are a gazillion way you can go with this idea to keep your Cinco de Mayo parties festive and new. Because when it comes to making homemade popsicles, the possibilities are endless.

The recipes that you'll find below are from +Shanna Schad over at PineappleandCoconut.com  and are pretty authentic, reminiscent of the same kinds of delectable frozen treats that you'll find in Mexico today.  

Far from boring, Mexican popsicles  - which are frozen fruit bars made from fresh, seasonal fruit, that are sometimes blended with cream or milk, are also sometimes pureed with sugar too. A couple of the recipes I'm sharing with you today are actually palentas de aguas or popsicles made with water, with the exception of the last two; the Mexican Chocolate and the Barcardi Pineapple Fusion Rum with Coconutrecipes. Popular flavors are chocolate, strawberry, raspberry, coconut, watermelon, cantaloupe, mango, and lime.

Don't they look good? I was thrilled when I saw Shanna's recipes... because they're pretty easy to make. Something else to think about is creating sugar-free recipes popsicle recipes for people who are calorie conscious or are diabetic. I bet they'd love to have a homemade Mexican popsicle! 

When you're having a Cinco de Mayo party for adults, why not serve Strawberry Agua Fresca Paletas with a shot of rum on the side to sip with each bite? That could have your guests shouting... Ole!



Make This Easy Cinco de Mayo Dessert: Paletas Mexicana (Mexican Popsicles)

Strawberry Agua Fresca Paletas

Cinco de Mayo Strawberry Agua Fresca Paletas (Popsicles)

(Printable recipe)
Makes 10 popsicles



Ingredients 4 cups strawberries, divided

3-4 tbsp organic sugar
2 tbsp fresh lemon juice
¼ c simple syrup
¾ c cold water

Instructions

  1. Wash and hull all the strawberries. Quarter 3 cups and place in a blender with the lemon juice and sprinkle 3 tbsp of the sugar over the top. Let sit 15 min to let the strawberries release their juices. Dice the remaining cup of strawberries into small pieces and sprinkle the remaining tablespoon of sugar on top and let sit for 15 min as well. 
  2. Divide the diced strawberries among the popsicle molds. Puree the strawberries in the blender with simple syrup and cold water. Let sit until the bubbles dissipate. Divide among the popsicle molds and freeze according to manufacturer instructions
Note: I ran the molds under lukewarm water and kept pulling on the popsicle sticks until one released and I wouldn't rinse anymore and just release the rest of the pops. I wrapped each pop in wax paper and kept in a freezer bag. I also let the popsicles freeze for about 20-30 min until slushy before adding the sticks so they would stay in better. 

You fill the molds with diced strawberries before you pour in the agua fresca, so you can see the strawberry pieces at the tops of the popsicles... and taste their wonderful deliciousness too.

Homemade Mexican Strawberry Popsicles

Oh boy! The Mango Chili Lime Paletas (or popsicles) below look really good too, don't they? This one has exceptional Mexican flavor; made with Ancho chili powder, they're not too spicy - thus, rendering them inedible. 

When hosting an adult party, mix the mango with the ancho, add a little lime juice, along with some lime zest and serve a shot of tequila on the side (to sip with each bite), and you're created your own little Cinco de Mayo heaven.

I love recipes like this; that add a unique quality to your party, differentiating you from everyone else... allowing you to stand out as the "ultimate party host".

Mango Chili Lime Agua Fresca Paletas


Cinco de Mayo Mango Chili Lime Agua Fresca Paletas (Popsicles)

Makes 10 popsicles
Ingredients

5 Atalufo Mangoes, 1 diced small, the others peeled and sliced for puree ( about 2- 2½ cups mango for the puree)

Zest and Juice of one lime
¼ simple syrup
½-2/3 c water
1 tsp ancho or cayenne chili powder

Instructions

  1. In a small bowl combine the diced mango with the chili powder and mix well. Place a heaping tablespoon of the mixture into each popsicle mold 
  2. Puree the remaining mango slices with the lime zest and juice, simple syrup and a few tablespoons of water, adding more water if necessary to bring the mixture just over 3 cups. Fill the molds with the puree and freeze according to manufacturer’s instructions.

Homemade Mexican Mango Chile Lime Popsicles

No selection ofpopsicleswould be complete without adding chocolate... yummers! Designed to be a distant cousin to something a lot of people love, Mexican Hot Chocolate, this one is out-of-this world tasty - featuring goat milk and Mexican-style stone ground chocolate, cinnamon and a pinch of brown sugar. Heat it up and it will come out like custard. Afterward, cool it overnight before you pour it into the molds. It will be the consistency of a thick custard and it will taste... sublime.

Mexican Chocolate Paletas with Cinnamon and Goat Milk


Cinco de Mayo Mexican Chocolate Paletas (Popsicles) with Cinnamon and Goat Milk

Makes 10 popsicles 
Ingredients 2 small cans evaporated goat milk
8 ounces abuelita or Mexican style stone ground dark chocolate (70%)
2 tbsp brown sugar
½ tsp cinnamon
1 Cinnamon stick
Instructions Instructions
  1. Combine all in a saucepan and heat until chocolate is melted and well combined about 10 min. 
  2. Let cool completely before filling popsicle molds. Freeze according to manufacturers directions
Notes I ran the molds under lukewarm water and kept pulling on the popsicle sticks until one released and I wouldn't rinse anymore and just release the rest of the pops. I wrapped each pop in wax paper and kept in a freezer bag. I also let the popsicles freeze for about 20-30 min until slushy before adding the sticks so they would stay in better. 

Please be advised that since they're dairy-based they will likely be quite a bit softer than other popsicles. So, don't be dismayed if they don't keep the perfect shape of the mold. But they taste good. No, take that back... they're amazing!

And last but certainly not least, this last recipe is a definite "celebrate Cinco de Mayo party" popsicle that your party guests are going to love. Forget Mexican Jello shots... these are party to the max, Mexican popsicles to-die-for!

Cinco de Mayo Bacardi Pinapple Fusion Rum fused with Coconut Paletas (Pina Colada Popsicles)

Makes 10 popsicles
Ingredients

2 cups diced pineapple ½ cup coconut milk

½ c pineapple juice
2 tbsp pineapple simple syrup
¼ c Bacardi pineapple coconut fusion rum (or coconut rum)
¼ cup finely shredded unsweetened coconut

Instructions

  1. Combine all in a blender and blend lightly, but don’t fully puree so it’s thick 
  2. Divide equally among the popsicle molds and freeze
