Must try! Must bake... these melt-in-the-mouth Black Sesame Butter Cookies.

I wonder if it is the latest food trend... Have you noticed that Singaporean are more health conscious with their sugar intake these days?

At this recent trip, I saw that there are many LOW SUGAR Chinese New Year cookies or treats selling at the CNY food fare at Takashimaya Square. And there are actually many sugar-conscious consumers like us who like the idea and bought those LOW SUGAR treats. Isn't this a good thing? It is true that there are many treats that can be delicious and contain low sugar too! The concept is somehow like how we like our sweet black sesame foods... It can be a little sweet but NOT too sweet. Well, I guess... Maybe the rich aromatic nutty taste of roasted black sesame seeds had already heightened the taste of the black sesame foods and causing the expectation of the sweetness in them to be kind of secondary.
Does it make sense to you? Whether yes or no, I would strongly encourage you to try baking my low sugar black sesame butter cookies recipe. Although each of these cookies has only 1g of added sugar, these very sesame are so simply delicious that you won't just stop one!

Here's the recipe.
Makes about 40 4-cm diameter cookies
80g finely ground black sesame seeds with no added sugar
100g all purpose or plain flour with 10% protein - please do not use cake flour.
30g corn flour
40g icing sugar
1/4 tsp baking powder
1/2 tsp salt
75g butter, cold and cut into cubes
75g black sesame paste with 49% fat and must has no added sugar

extra all purpose or plain flour for dusting and rolling, if required
1-2 tsp vegetable oil for brushing

1 tsp sesame seeds to decorate, if desired
Preheat oven to 180ºC. Line baking trays with baking paper.
To pre-roast the finely ground sesame seeds, spread the sesame seeds on the prepared tray in thin layer and bake at 180ºC for 8 mins or until golden and fragrant. Set aside to cool completely.
Sift flour, corn flour, icing sugar, baking powder and salt in a large mixing bowl. Then, use a spoon or a spatula to mix in the pre-roasted sesame seeds until combined.
Using your finger tips, rub cold butter into the flour mixture until well incorporated and mixture will look like coarse buttery crumbs. Add black sesame paste and use your hands to gather the crumbs into a pliable dough. Do not knead or over handle the mixture.
Dust rolling pin and non stick surfaces (like baking paper) with flour if required. If you watch my video, you will see that I don't need to dust my rolling pin and surfaces with flour because the dough is actually very easy to handle. Use the rolling pin to roll cookie dough to about 1 cm thick. Cut dough with cookie cutters. Transfer and arrange the cut dough onto the prepared baking tray with about 1-2 cm apart. Gather scraps and continue to roll and cut out dough until the dough is used up.
Use a fine brush to lightly brush the top of the cookie dough with oil. Decorate the cookies with a small pinch of white sesame seeds if desired and press lightly and gently to push the seeds slightly into the dough.
Bake for 12 mins or until the cookies are slightly golden. Important: Depending on the shapes and sizes of the cookies, please note the baking duration and number of cookies yielded can vary.
Leave to cool slightly on the baking tray for about 5-10 mins to a wire rack, then transfer the cookies to cool on the wire racks to cool completely. Store cookies in airtight container when they are completely cooled.
