If Looks Could Kale Salad

You either love kale or you hate it and I LOVE it.  Its not just about the taste for me its the fact that it just looks so beautiful, I mean so beautiful I just want kale arrangements all over the show, just so I can get all giddy and giggle like a geisha girl.

This salad is inspired by the typical Greek salad, just way better for you and without feta.  Its perfect for picnics or just to gobble it up by yourself.

Ingredients

  • 10 Tuscan kale leaves, stem removed and shredded
  • 2 tbsp olive oil
  • 1/4 tsp salt
  • 3 tbsp basil, chopped
  • 2 tbsp mint, chopped
  • 1 tsp oregano, chopped
  • 1 tbsp red wine vinegar
  • 1 tsp dijon mustard
  • 1 cup baby tomatoes, halved
  • 1/2 cucumber, diced
  • 1 small red pepper, diced
  • 1/3 cup pitted olives
  • 1/4 cup red onion, chopped
  • pinch red pepper flakes
  • flaked almonds for garnish – optional

Directions

In a large bowl add the kale with a 1 tbsp olive oil, salt and herbs.  Massage the kale with your hands until the kale has softened 2 minutes.

In a small bowl mix the together the remaining oil, mustard and red pepper flakes.  Pour the mixture over the kale and toss.  Add in the remaining ingredients and toss. Top with almonds.  This salad keeps well in the fridge and is a great make ahead salad, so enjoy this whenever you want.
