Homemade Egg Rolls with Homemade Wrappers!

It was a fun day in my kitchen today :) I had a great time too! It started by making lemon poppy-seed muffins for breakfasts this week (or the next day or 2 – they go fast!)

I was wondering what to make for dinner. I had lots of ideas running through my head, but decided since I had a bunch of leftover brown rice, why not make fried rice? Then I saw on Pinterest a recipe for Thai chicken meatballs (I’ll share that recipe tomorrow – they turned out amazing!) and since I was feeling really ambitious, I thought – why not make my own egg rolls with homemade wrappers? I’ve made egg rolls before using store bought wrappers, but how hard could it be to make them? You know what you need? 3 ingredients!

Ingredients

  • 2 cups water
  • pinch salt
  • 1 egg
  • 1/2 cup cold water

Instructions

  1. In a large bowl, mix the flour and salt together.
  2. Make a well, add the egg and using a wooden spoon, mix well (about 30 seconds)
  3. Add the water - a little at a time until no longer clumped, and the dough is a little sticky, I ended up using maybe 2 tablespoons more water.
  4. When it gets too hard to stir with the spoon, just get your hands in there and knead for a few minutes until it is smooth. Let it rest for 20 minutes.
  5. Take 1/2 the dough, and roll it out as thin as you can. Make sure you place some flour on the counter you are rolling it on, so it doesn't stick.
  6. Cut it into squares about 3x3 inches.

So for my filling, I just threw stuff in my mini food processor. I used:

Carrots, broccoli slaw, green onions, cauliflower. Salt and pepper and a tablespoon of soy sauce.

Take 1 square – add the filling

You can deep fry these but I just use a small skillet. Add about a tablespoon of canola oil in the pan, turn the heat on low and cook for about 3 minutes per side. Make sure the heat is low enough so it doesn’t burn!

This is a fun project to do – even though it was a little more effort than just buying the wrappers, I sure had fun making them
