Holiday Family Recipe | Stuffed Meatloaf Roll-Up

When it comes to being home for the holidays, there is nothing more that I love, than my moms homemade recipes, that she makes well i’m home.

This week, when she told me that she was going to make her “famous” stuffed meatloaf roll-up, I could barely contain my excitement, and my mouth basically started watering.

Even though the holidays are over for a while, I figured that I would share with you guys my moms recipe, as i’m sure she’d want me to do the same.

What You Need:

+ 1 lbs of Meatloaf Mix { Your local grocery store should have it }

+ 1 lbs of Ground Turkey

+ 6 Green Onions { You should make sure that their sliced & diced }

+ 8 Mushrooms { You should make sure that their sliced & diced }

+ A dash of garlic, pepper, parsley & salt

+ 1 Egg

+ A Tablespoon of BBQ Sauce

+ A Tablespoon of Mustard

+ A cup full of fresh Spinach

+ Cheese of choice { My mom used 1 cup of shredded Gouda Cheese }

Directions:

1. Except your Spinach and Cheese, combine all of the above ingredients together.

2. Once all ingredients { except your Spinach and Cheese } are mixed together, then you need to flatten out your meat into a rectangle, to 1/2 inch thick.

3. Then, put a layer of Fresh Spinach Leaves over the top of the meat, and a layer of the Cheese of your choice.

4. Take the end of your layer of meat, and roll it up, keep rolling it up, until it can fit into the size of your Meatloaf pan.

5. Bake it for at least 1 hour, until the Meatloaf is brown.

6. Then slice, and serve your Meatloaf.
