Beans and Quinoa

I was looking for an upgrade on rice and beans. A quick, easy and very budget friendly dish but rice is not my favorite thing ever. My solution? Quinoa. Of course. It’s something we eat a ton of. This made a huge pot that was great for sides, lunches or even for dinner.

 

Something about a comforting combination of quinoa, beans, salsa and spices just makes me want feel warm and cozy when the weather is starting to get cold (hello snow in the forecast).

 

You can easily make this vegetarian/vegan friendly if you check the label of the beans you are using. The ones I had did have bacon in them, delicious for me but not what you want if you are going for meatless.

Ingredients (Serves 4)

  • 2 cups quinoa, cooked
  • 2 cups thick and chunky salsa
  • 1 can Black Beans, rinsed and drained
  • 1 can fiesta style baked beans (such as Bush’s, or any beans with spices)
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tsp coriander
  • Salt/Pepper

Instructions

In the pot the quinoa cooked in, add the salsa, spices, salt/pepper and beans.

Serve immediately.
