Basic Chocolate Cake with Fresh Peaches and a Balsamic Reduction

Yes, I know.  That is a really long title and it just seems like a weird cake right? Well balsamic vinegar is not just for your salad dressings any more.  Adding balsamic vinegar to this basic chocolate cake recipe took it from yum to wow, it just gives it a little extra hmm what could that be flavor.  Why stop there?!  Using this cake as a base for a dessert that’s just out of this world is what you really need right now.  Go ahead…give this recipe a try.

BASIC CHOCOLATE CAKE WITH FRESH PEACHES AND A BALSAMIC REDUCTION1 cake

Ingredients

  • 1 1/2 cups cake flour
  • 1/3 cup cocoa powder
  • 1 cup sugar
  • 1/2 tsp salt
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tbsp aged balsamic vinegar
  • 1 tsp vanilla essence
  • 1/3 cup sunflower oil
  • 1 cup strong brewed coffee
  • 2 peaches, sliced
  • non dairy ice cream
  • 1 cup balsamic vinegar

Directions

Preheat the oven to 400F.

In a large bowl mix together the flour, sugar, cocoa powder and salt.  Add the baking soda and baking powder.   Add in the balsamic vinegar,vanilla, oil and coffee.  Mix until well combined and lump free.

Pour the batter into a prepared pan and bake for 25 – 30 minutes or until a toothpick inserted in the middle comes out clean.

Let Cool.

Crumble one slice of cake into a bowl, with one scoop of ice cream and a drizzle with balsamic reduction. Garnish with peaches.

Balsamic reduction directions

In a pan bring the 1 cup of balsamic vinegar to a boil reduce heat.  Keep stirring until syrupy.
