A Peppery Kick

By Yonni @vegandthecity
Watercress is flavorful little green!  This relative of the mustard plant is available all-year round, but is most often found on menus and in grocery aisles between April and June.  It also has remarkable health benefits, in addition to those typical of a leafy green, like reducing DNA damage to blood cells which can be a trigger for developing cancers when consumed on a daily basis.A Peppery KickEating this regularly, with it's peppery kick, may or not may not be appealing, but you can get your intake in a variety of ways.

For one, it is great for juicing.  Mix it with some spinach, perhaps a little ginger, some pear or apple, and even some banana to temper the flavor, and you have a delicious, super healthy, thirst-quenching drink.  I just bought the Nutribullet 900 so it will surely wind up in there. You can also toss it  in a light vinaigrette as a side salad, or bolster it into a fuller vegan meal by adding some cucumber, some lentils or some citrus - mandarin oranges or grapefruit perhaps - with some avocado too.  Martha Stewart has a salad recipe in which she adds roasted sweet potato - that's worth a shot.
