White Chocolatious & Cinnamon Fudge

Fudge Experiment No. 1

I’ve been itching to try my new thermospatula so yesterday I thought it was time I tried my first fudge concoction. Drum roll please, my first experiment is: Milky buttons and cinnamon!

The original fudge recipe I found on the carnation website which can be found here.

What you will need:

397g tin of condensed milk

115g of softened butter

150g of milk (I just used semi skimmed)

450g of demerara sugar 

Optional ingredients I used:

126g of Milky buttons

a pinch of cinnamon

Equipment needed:

A baking tin lined with baking paper

Heavy based saucepan 

 Sugar thermometer (if you have one)

Spoon,

Whisk.

1. First add all the ingredients into the saucepan and turn on the heat, you must continue to stir to make sure the sugar doesn’t stick to the sides and burn. Bring to boil until all the sugar is dissolved.

2. Continue to stir and scrape the sides, turn down the heat. This will take a little time but you have to persevere as the results are fab.

3. A couple of minutes before you take the fudge off the heat add the milky buttons and cinnamon, keeping stirring until the chocolate is melted and add in the pinch of cinnamon.

4. Once the temperature has hit 118 degrees or using the fudge ball test (the temperature only hit 113 degrees on my thermospatula and it set fine) take the fudge mixture off the heat and beat with the whisk until it starts to set. Don’t over beat it as it will go crumbly.

5. When its starting to set pour into the lined baking tin using a spoon spread it into the corners. You then need to put it in the fridge for a couple of hours.

6. Once set take out of the fridge and cut into squares and enjoy.

Tip: If you haven’t kept it on the heat for long enough and it hasn’t set, don’t worry don’t waste it, it can be reheated and used as a sauce instead perfect for ice cream, strawberries, pudding anything you can think of.   

Verdict: Overall I think I didn’t use enough milky buttons as it didn’t change the color as I thought it would, it gave it a delicate taste and the cinnamon couldn’t be tasted at all. I think that this experiment hasn’t turned out perfectly but it still tasted nice. Next time I think I would use more chocolate and more cinnamon. 

Score: 6/10 Nice but not what I wanted.
