People are forever asking how I manage everything with such a busy schedule. I love to cook, but I don’t always have time to do so in the manner I would like. This weekly journal is a way to keep it real and show that while my intentions are good, sometimes life and all of its activities get in the way of serving a delicious, home-cooked meal and that it is perfectly okay.

  • Saturday: Holly and I were out and about during dinner, so we stopped at our favorite Mexican restaurant before heading home. It was snowing while we were out, so the stores and restaurant were relatively quiet. We had a great meal and had a very nice time.
  • Sunday: It was the Super Bowl and the Super Bowl means pizza. We ordered ours for delivery before the game and ate while watching it. In a way, we had our own mini Super Bowl party.
  • Monday: I don’t know if it is a thing, but Holly and I made it Taco Monday. She had an unexpected break from dance classes tonight due to a snowstorm, so we had a lovely meal of tacos and enjoyed every bite. Because tacos.
  • Tuesday: Meals for two people are odd, especially when we are both hungry at different times. Holly was not interested in a “real” meal tonight, so she heated up some of the leftover taco fixings. I went with a bowl of cereal. Both of us were happy with our choices, so that is something.
  • Wednesday: Holly’s long day of dance meant I was alone for dinner. I ended up cooking my favorite potato chip casserole that was dinner for me with plenty left over for either lunch and/or dinner for the both of us tomorrow.
  • Thursday: We came home during yet another snowstorm (that’s the third this week), so neither of us were in the mood to get home and cook. We stopped at Culver’s on the way home and called it good.
  • Friday: After yet another snow day, Holly was firmly entrenched at home and ended up eating leftovers while I was out clearing the driveway. Thankfully, I still had that casserole to heat up when I came back inside. Easy peasy.
